The hype seemed to be over. Over a decade ago, many burger restaurants suddenly opened. Hamburg and Ter Masch & Co on Witte de Withstraat and Diego Buik with Diego's mainly specialised in gourmet burgers with culinary toppings. After that, things remained quiet for a while. But now new local iniatives such as Goat, Smash and Drippy's are back, serving smash burgers. Where can you get your burgers?
Ter Marsch & Co
Back in 1890, Ter Marsch & Co opened its doors as a shop of the Factory of Refined Meat Products on Witte de Withstraat. Since 2014, it has been a bar and grill specialising in serving burgers, fresh-cut fries and homemade sauces. Ter Marsch & Co now also has locations in Amsterdam.
Many different national and international titles have already been won since its opening. For the corona period, Ter Marsch & Co won the award for best burger Benelux 2020 and 2021 twice in a row. During last year's Horecava, Chef Andy Hoogvliets walked away with the win at the finals of the Netherlands' Best Burger with the La Fiesta de Carne.
The burger is inspired by flavours originating from Spain. La Fiesta de Carne is served on a brioche bun with a meat patty of Spanish Black Angus from family-owned Miguel Vergara. Both sides of the brioche bun are lightly smeared with Andalusia cream and custard of Spanish manchego cheese. It is then topped with fresh fennel, dried tomato, and 24-month aged Gran Reserva Serrano ham and finished with house-made piment d'Espelette. This gives it a little kick because of the chilli. The burger is on the menu like other previous winners.
Hamburg
Probably the first restaurant to focus purely on burgers when it opened in 2013. Hamburg has since become a fixture on Witte de Withstraat. Since 2024, there has also been a branch on Katendrecht.
The Goat
After its success on the Schiedamse Vest and in Breda, The Goat opened a third shop in 2024. A second Rotterdam branch, at Tiendplein. The offer there too consists of smash burgers, chicken tenders and loaded fries. All chicken products can also be ordered vegetarian. In addition, drinks such as homemade lemonade, a milkshake, spiked slushes and Williams Cocktails will be served.
Smash
Diego Buik could well be considered the mayor of Rotterdam. He once created the most expensive burger at the time and in his restaurant under the new Luxor Theatre, he serves original variations of burgers, such as a patty in a donut or a burger with bugles among other culinary dishes. Diego Buik has also opened a new concept with Ronald Schoonrok: Smash.
The menu consists of three burgers (both meat and plant-based to order), fries, soft ice cream and drinks. Belly says: ''Rotterdam is a colourful city and we think it is important that everyone feels welcome. We have therefore chosen to offer all three burgers as meat- and plant-based options and the meat is halal.'' For the plant-based burger, the Rotterdam entrepreneurs have teamed up with Beyond Meat, the American producer of meat substitutes. The vegan burgers are made with plant-based minced meat, consisting of packed with protein.''
Drippy's
Renowned influencer and presenter Kaj Gorgels has opened Drippy's on the famous Stadhuisplein together with experienced hospitality entrepreneur Ad Schaap (known from De Beren) and culinary influencer Colin Knopper. The restaurant with contemporary interior serves the popular smashburgers in different versions.
Burger Club
Slightly more hidden on Nieuwe Binnenweg, Burger Club has also been serving award-winning burgers for years. What makes Burger Club special is that guests can choose from three types of meat: MRIJ (from butcher Piet van den Berg) , Wagyu beef and Iberico pork. Those types form the basis of several variants such as the Dirty Burger, a brioche, lettuce, onion, pancetta (Italian bacon), young mature cheese, beef tomato, fried egg, ketchup and mustard, and Hot Ass. A brioche topped with lettuce, grilled aubergine, goat cheese, grilled jalapeños, chorizo Iberico, aioli, crispy onions and sundried tomato.
Stooges' Dinner
Station Bergweg is home to Stooges'. A concept by Kick Vogel and Jip Boon. They worked together at The Suicide Club, both going in completely different directions in the process. Kick went to Biergarten and The Sailor and the Girl and Jip via Cape Mary to Thirteen and then Williams Canteen. When Williams Canteen closed, Kick worked at Niko's in Kino. Together, they now mostly make burgers.
