During this experience, you will meet circular entrepreneur Sean Patrick of Gabanna Foodworks and learn how he transforms local ancient grains and bread surpluses into nutritious pasta. You will get a glimpse into the BlueCity Lab, where pioneers are working on future-proof materials and solutions, from duckweed tiles to beer made from rainwater. The tour ends with a tasty plant-based pasta puttanesca, prepared by an in-house chef.
